
last night, i decided to bake some bread. about a month ago, i experimented with making a couple rye loaves with sesame and sunflower seeds mixed in. this time, i just tried a plain white loaf. i also tried out some different shapes of loaves, which turned out really well!
ever since my time in ecuador, i have really been interested in making as many homemade things as possible. i enjoy this for a few reasons: 1)cooking is a great stress reliever for me 2)i like the process 3)i like knowing what is in my food and how it is being made. i am realizing that you can make pretty much about everything from scratch and it is not that hard...if you have the time. i would like to think that i would have time to do this, make homemade things as much as possible..but who knows what God has in store.
it is hard to believe that i only have a little more than 3 months left here at islandwood. wow, my time here has been some of the most eventful times in my life....as well as a good preparation for opportunities in the future. i cant believe it has only been less than a year since i have returned from ecuador...and i am realizing my home is still somewhere south of the states...and will soon be in costa rica. i am looking forward to visiting jared in quepos, costa rica during my spring break...and for my birthday as well! it will be a great time. i cant wait to see and just be with him.
although we are spending 90 days or so apart, the Lord has a purpose for it and is continuing to prepare us for when we do get to live together. we have been very fortunate to be able to communicate through phone calls, about twice a week and emails about every other day. God provides everything in His perfect timing....from phone calls to....great things that are happening at the center....that i will wait for jared to share.
